Although there are many keto desserts recipes you can make or buy, none of them tastes remotely sweet and good enough to replace the dreaded chocolate desserts (ugh!).

The great thing about these DIY keto rolls is that they’re incredibly easy to prepare. They are super low in carbs, of course, even with the cheese cream frosting. One of these rolls has just around 2 net carbs which is perfect for keto dieters.
You don’t need to use eggs in these rolls. That’s a godsend if you’re allergic to eggs. The rolls are an excellent addition to a cup of coffee or tea for breakfast, but can also be enjoyed as a tasty dessert. Just follow the instructions below in the article to make them with ease.
DIY Keto Cinnamon Rolls
First comes the though
Not surprisingly, the dough is the first thing to prepare. For this recipe, you’ll need a pretty fat head dough made with tasty mozzarella. Start by melting the special type of cheese before mixing it with some flax meals and almond flour. Yes, we know that it sounds weird, but just do it!
The classic fat head dough should look like this:
It should be elastic and should spread nicely without ripping. Thankfully, gluten-free doughs such as this one always play nice.
Roll it out!
Next comes the rolling. Once your fat head dough is ready, you need to spread it on parchment paper or place it between two silicone mats. In this way, the dough won’t stick and no waste will be left on them (unlike with paper). If you’re wondering about the size, it needs to be roughly 13×10 inches.
Cinnamon time!
It’s finally time to add the cinnamon filling. Melt some butter first and brush the fat head dough with it. You should then sprinkle it with cinnamon, crushed nuts, and some Swerve if you like. Spread your mixture nicely to the edges, then roll the dough into…well, cinnamon rolls.
Take a look at the picture to get a general idea of what it should look. In terms of size, a single section should be around two fingers width. You can put the rolls in a muffin tray so they stay firm. If you don’t have a muffin tray, a baking dish will do.
Before you do that, pinch the bottom of each roll lightly with your fingers. This will keep the delicious filling in each of them. Keto Cinnamon Rolls Recipe
Ingredients
Rolls
- 2 cups mozzarella
- 3 oz. cream cheese
- ¾ cup almond flour
- 1 tablespoon of flax meal
- 1 teaspoon of baking powder
Filling
- 1 tablespoon butter (melted)
- 1 tablespoon cinnamon (powdered)
- 2 tablespoons pecans (or other nuts, crushed)
Glaze
- 2 tablespoons heavy cream (if you sub for other liquid, start with less as nothing is as thick as heavy cream)
- 2 tablespoons cream cheese
- 2 tablespoons Swerve (powdered)
Instructions
Before you start with the process, preheat the oven at 350 F. You’ll need to prepare the rolls first. Melt the mozzarella and cream cheese in a microwave in 30-second increments. They should be completely melted by the end. Add the almond flour and flax meal and knead well to make the dough.
Spread the dough between two silicone mats (or parchment paper). The approximate size you’re looking for is 13×10. Next comes the filling. Mix the Swerve with the cinnamon in a bowl while you’re melting the butter. Next, butter the dough up and sprinkle the cinnamon mix on top. The chopped nuts come last.
Cut the dough in 8 portions (two finger width). Put each roll in a muffin tin, then bake until they’re golden brown. That should take up to 15 minutes. Make the cream cheese icing in the end and glaze the rolls with it then enjoy.
